Moist Banana Bread
The classic American very ripe banana bread: moist, flavored with cinnamon, and ready to bake in 15 minutes.
Banana bread was born in the United States in the 1930s, with the arrival of baking powder and the desire not to throw away overripe bananas. The more black spots they have, the sweeter and more flavorful the bread will be. It takes 15 minutes to prepare with just a bowl and a fork.

Step-by-step method
0 / 5 steps done-
Preheat the oven to 180 °C. Butter the pan and line it with parchment paper.
-
Mash the bananas with a fork in a mixing bowl. Add the melted butter, brown sugar, eggs, and vanilla, and mix.
-
Add the flour, baking powder, cinnamon, and salt, and mix just until no dry flour remains: overmixing makes the bread dense.
-
Pour the batter into the pan and bake for 55 minutes, until a knife inserted into the center comes out clean.
-
Let cool for 15 minutes in the pan, then turn out onto a wire rack before slicing.

Tips and variations
- With walnuts or chocolate chips: add 80 g of either to the batter.
- Lighter: replace half the butter with plain yogurt.
- As muffins: divide the batter among 12 muffin cups and bake for 22 minutes.
Storing and reheating
Keeps for 4 days at room temperature, tightly wrapped, and up to 3 months in the freezer, sliced. A slice popped in the toaster regains all its moisture.

Questions
How do I know if the banana bread is done?
A knife inserted into the center should come out clean or with a few crumbs. If the top browns too quickly, cover it with aluminum foil.
Can I reduce the sugar?
Yes, down to 80 g if your bananas are very ripe: they already provide a lot of sweetness.
