Step-by-step method
0 / 5 steps done-
Place the whole potatoes in a saucepan of cold salted water, bring to a boil, and cook for about 15 minutes: the tip of a knife should slide in without resistance.
-
Meanwhile, boil the eggs for 10 minutes in boiling water, cool them in ice water, then peel them. Cook the green beans for 6 to 8 minutes in another saucepan of boiling salted water and rinse them under cold water to keep their color.
-
Prepare the vinaigrette: whisk the mustard, vinegar, salt, and pepper, then drizzle in the olive oil.
-
Slice the warm potatoes into rounds and drizzle them with half of the vinaigrette.
-
Arrange the potatoes, green beans, tomatoes, red onion, flaked tuna, olives, and quartered eggs. Drizzle with the remaining vinaigrette and serve.

Tips and variations
- Strict Niçoise version: no potatoes or green beans, with anchovies, radishes, green bell pepper, and raw fava beans.
- With fresh tuna: replace canned tuna with a tuna steak seared for 1 minute per side and sliced.

Questions
Can Niçoise salad be made the day before?
Yes, cook the potatoes, beans, and eggs the day before and keep them chilled. Assemble and dress just before serving so the tomatoes stay firm.
Tuna or anchovies?
Both are traditional in Nice. Tuna is milder and more filling, anchovies are saltier: use less salt in the vinaigrette if using them.
