Sütlaç, Turkish Rice Pudding with Cinnamon
The creamy rice pudding of Turkish pastry shops, flavored with vanilla and served well chilled, sprinkled with cinnamon.
Sütlaç is one of Turkey's most beloved desserts, served in small terracotta bowls. More fluid than a traditional rice pudding, it gets its silky texture from a little cornstarch. It takes 45 minutes to prepare and is enjoyed cold, with a pinch of cinnamon.

Questions
What kind of rice should I use for sütlaç?
Short-grain rice (like pudding rice or sushi rice): rich in starch, it yields a creamy texture. Long-grain rice remains too firm.
Can it be made with plant-based milk?
Yes, with unsweetened oat or rice milk. The texture is a bit lighter: add an extra half-spoonful of cornstarch.
