Tips and variations

  • Vegetarian: replace the chicken with pan-fried firm tofu and the fish sauce with soy sauce.
  • With shrimp: add them only 3 minutes before the end so they stay tender.
  • Milder: start with 1.5 tablespoons of paste and add more to taste.

Storing and reheating

Keeps for 3 days in the refrigerator and 2 months in the freezer (without the rice). Reheat over low heat, adding a little water if the sauce has thickened.
