Vanilla Panna Cotta with Mixed Berry Coulis

The classic Italian cooked cream, jiggly and vanilla-scented, served in dessert glasses with a tart mixed berry coulis.

Originating from Piedmont, panna cotta ("cooked cream") is one of the simplest desserts in Italian cuisine: sweetened cream, flavored with vanilla, and set with a little gelatin. The secret is not to use too much, for a texture that barely jiggles. Prepare it the day before: it will be even better.

Step-by-step method

0 / 4 steps done
  1. Soak the gelatin sheets in a bowl of cold water for 5 minutes.

  2. Heat the cream, milk, sugar, and vanilla until just simmering, then remove from the heat.

  3. Squeeze the excess water from the gelatin and add it to the hot cream, stirring until melted. Divide among 6 dessert glasses, let cool slightly, then refrigerate for at least 4 hours.

  4. For the coulis, heat the berries with the sugar and lemon juice for 5 minutes, blend them, then pass through a fine-mesh sieve if you want to remove the seeds. Let cool and pour over the panna cottas just before serving.

Questions

Why didn't my panna cotta set?

The gelatin may have been heated too much, or the chilling time was too short. Allow at least 4 hours in the refrigerator, ideally overnight.

Can it be unmolded?

Yes, with 4 sheets of gelatin instead of 3: dip the mold in hot water for 5 seconds, then invert it onto a plate.
